These are some delicious one-bowl cookies that are perfect for the holidays. They are soft and chewy and filled with chocolate, like all good cookies should be!
Makes 16
170g butter, melted
210g flour
80g dark chocolate drops
80g white chocolate drops
90g brown sugar
90g caster sugar
45g cocoa powder
1/2 tsp salt
3/4 tsp baking powder
1 egg
6 candy canes
Preheat your oven to 180°C and line a cookie tray with baking paper.
In a large bowl, melt butter in the microwave. Once melted, add all the remaining ingredients (except candy canes) and stir to form into a dough.
Use a cookie scoop to spoon your cookie dough onto the tray, leaving plenty of space as they will spread quite a bit.
Place your candy canes on a chopping board and use something heavy like a rolling pin to smash them into smaller pieces. Pile some candy cane crumbs onto each cookie. Bake the cookies for about 10 minutes, until slightly browned at the edges.
Use a cookie cutter to reshape the cookies into perfect circles straight out of the oven and then top with a few more crushed candy cane pieces to finish them off! Watch the video below for some visual instructions.
Enjoy!
