Glazed Doughnut Bake

One of my more "random" recipes, this consists of brioche dough that is rolled into balls and baked then drizzled with vanilla glaze. I then went full 90s child on it and covered it in smashed fruit loops, but you could omit this or put sprinkles or whatever your heart desires. I did love the added crunch factor though!



Dough

1 cup milk

2 tsp instant yeast (10g - check the expiry!)

2 eggs

2 Tbsp sugar

1 Tbsp salt

170g butter, melted

3 1/2 cups flour


Glaze

1 cup icing sugar

1/4 milk

1 tsp vanilla

Fruit loops, nuts, sprinkles - whatever you like



Heat the milk in the microwave for 20-40 seconds, until lukewarm, you should be able to put your finger in it and it feel the same temperature. You don't want it to be too hot or it will kill the yeast. Once warm, stir through the yeast and set aside.


Place the eggs, sugar and salt in a large bowl or bowl of your stand mixer. Whisk to combine. Then pour in the milk mixture.


Melt the butter in the microwave. Then add the flour and melted butter to the bowl with the eggs and use a dough hook to mix and form the dough, leaving it on a low speed for about 5 minutes until it doesn't feel sticky to touch. If you're doing this by hand it will take about 10 minutes on the counter, try to avoid adding flour as this can make the dough tough.


Once the dough has formed, place it into an oiled bowl, covered with a tea towel for about 2 hours, until doubled in size. Once risen, cut the dough into even size pieces (about 30) and roll into balls then place onto a lined baking tray and cover for another 30 minutes to rise.


Preheat the oven to 180°C and pour 1/4 cup of oil into your desired dish. Put this in the oven to heat up while the oven preheats. Once the oven is hot, VERY CAREFULLY place the dough into the hot oil (you may want tongs for this). Bake in the oven for 30-40 minutes, until puffed and golden.


Meanwhile, mix together the glaze ingredients and set aside your toppings.


Once the dough babies have baked, cover in glaze and your desired toppings. Best enjoyed warm.
