I'm obsessed with margaritas at the moment! I never thought I would enjoy tequila, but once you're able to afford the good stuff, you realise it's not all bad! My favourite is the 1800 coconut flavour, it's very subtle but the flavour fits nicely with all margaritas! You can take this recipe and adapt the flavour any way you like by changing out the syrup.
Serves 1
Salt or Sugar for the rim
Ice - lots
60ml tequila
30ml lime juice
15ml cointreau
15ml simple syrup (e.g. passionfruit, raspberry, elderflower or plain)
To make simple syrup, combine equal parts of sugar and water and boil for a few minutes, until all the sugar is dissolved. If you want to make flavoured one, add in your choice of fruit or extract to the pot and allow this to sit until it has completely cooled, then strain into a jar.
Start by rubbing the rim of your glass with a lime wedge, then dip it in salt or sugar.
Margarita is best served (in my opinion) over crushed ice. I crush ice at home by placing it in a linen bag and smashing it with a rolling pin. Fill your glass with ice.
In a cocktail shaker, combine tequila, lime juice, cointreau and syrup with a handful of ice. Shake until you can no longer feel your hands!
Strain into prepared glass and enjoy!
