One Bowl Sugar Cookies

These cookies are soft and sweet with a slightly crisp edge, the kind of treat the kids will love. There's lots of options for the decoration, you can stir sprinkles through the mixture and roll them in sugar or you could drizzle a lemon icing on them or coloured white chocolate. These are perfect for a festive season because you can change the decor to suit! You could even use chopped candy cane at Christmas time ☺️




Makes 16


225g butter, at room temperature

1 1/2 cups caster sugar

1 egg

1 Tbsp vanilla extract

2 1/4 cups flour

1/2 tsp baking powder

1/4 tsp salt

OPTIONAL - To make chocolate flavoured, remove 2 Tbsp flour and add 2 Tbsp cocoa

Sprinkles - depending on the kind you use, about 1/3 cup worth


Preheat oven to 180°C. Line an oven tray with baking paper.


Place room temperature butter and sugar in a large bowl or bowl of your stand mixer. Use electric beaters to beat for about 5 minutes (yes 5) until it becomes very pale.


Add all the remaining ingredients (add sprinkles a little at a time if you're not sure) and beat again, just until combined.


Use a cookie scoop or heaped tablespoon to scoop dough onto oven tray (I only fit 6 on my tray as these spread quite a lot) then sprinkle the tops with extra sprinkles. Here I put an speckled egg on the cookie too, if it's christmas you could decorate with smashed candy cane!


Bake cookies for about 10 minutes, until the edges of the cookie are just slightly browning. When they come out of the oven, the centre might look a little under done but don't worry it will set and be perfect!


Allow the cookies to cool for 10 minutes or they will break apart when transferring. Enjoy!
