Taken one of my favourite recipes and gave it the old peanut butter choc twist because, well I can’t help myself. SO easy and comes together in a flash, the perfect treat to bring to a party or pop in the school lunch box.
Serves 12
100g butter
150g marshmallows
100g peanut butter
150g rice bubbles
200g milk chocolate
Line a square dish (about 25x25cm) with baking paper, so it comes up all sides. This will help you to pull the slice out later.
Place butter, marshmallows and peanut butter in your largest pot. Melt on low heat until marshmallows have completely melted. (Use a metal spoon for stirring as marshmallow will stick to wooden spoon).
Turn off heat and stir through rice bubbles. Once all mixed together, transfer to prepared dish and press down with the back of a spoon so it is really compact.
Melt chocolate in the microwave or in a heat-proof bowl over a pot of simmering water. Pour melted chocolate over slice and spread out to cover the surface evenly.
Set in fridge for 30 minutes before slicing.
