A really simple, quick and easy peanut butter slice that will disappear within 24 hours... peanut butter and chocolate is the only combo I'll ever need.
100g butter, at room temperature
150g peanut butter
1 egg
1 tsp vanilla extract
1/2 tsp salt
200g plain flour
100g caster sugar
100g brown sugar
1/2 tsp baking powder
250g chocolate (I used Whittaker's creamy milk)
Flaky salt
Preheat oven to 180C and grease a square baking dish (about 30x30cm) with butter.
Place room temperature butter, peanut butter, egg and vanilla in a large bowl or bowl of your stand mixer. Use electric beaters to beat together until smooth and combined. Beat in all remaining ingredients (the mixture will be crumbly - this is normal).
Press into prepared dish and bake for 10 minutes. Meanwhile, melt chocolate by placing it in a heat-proof bowl over a pot of simmering water or in quick bursts in the microwave.
Pour melted chocolate onto base and allow to set (you can place in the fridge once dish has cooled down).
Sprinkle slice with some flaky salt if you like it, then slice into squares.
