Rainbow Pop Tarts 🌈

If you're looking to celebrate your authentic self with some rainbow treats then you've come to the right place. These little pastry puffs are so quick and easy to make and super impactful, the perfect treat to brighten up your party - slay queen! 👑

3 sheets puff pastry

1/4 cup your favourite jam (or you could use canned fruit, pb & banana, choccy chips etc.)

2 cups icing sugar

Lemon juice or water

Food colouring and any decorations you desire


Preheat the oven to 200°C and line an oven tray with baking paper.


Start by cutting your pastry sheets in half vertically, then each section in half, then repeat horizontally so you should have 16 little squares.


Place about 1/4-1/2 teaspoon amount of jam/filling onto half the pastry squares and then cover with a pastry top. Use a fork to crimp the edges and seal them shut.


Transfer to lined tray and bake for about 12 minutes, until just golden and bottom of the pastry is cooked through.


Meanwhile, mix together icing sugar with lemon juice (a little at a time) until you reach the desired drizzling consistency. Then you can split into bowls to colour as desired - I did 7 colours for a rainbow effect of course!


Once the pop tarts have cooked, drizzle them with icing and sprinkle with any other decorations you like such as sprinkles or freeze-dried fruit.
