I was in the mood for a warm pudding that wasn't the usual and with some white chocolate in the cupboard I had the idea for a warm white choccy pudding. Since I would need to sell my house in order to afford some raspberries, I opted to make this with raspberry jam instead, but if you have some in the freezer they would work really well too. Served warm with oodles of ice cream this is a cozy winter treat you'll be proud of.
Pudding
1 cup flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp salt
100g white chocolate, chopped
Zest of 1 lemon
70g butter, melted
3/4 cup milk
1 egg
1/2 cup raspberry jam or frozen/fresh raspberries
Preheat oven to 180°C.
Mix together the dry ingredients in a large bowl with lemon zest.
Melt butter. Once melted, whisk together with milk and egg. Pour into dry ingredients and fold together.
Transfer mixture to a baking dish about 20x20cm. Bake for about 45 minutes, until golden and cooked through.
Serve immediately with a giant spoonful of ice cream.
